Oven-roasted chicken legs with new potatoes, carrots and onions. Comforting tastes of winter cooked in yoghurt, lemon juice and sundried tomato paste marinade with oregano and pepper flakes. 

When the spring to summer vegetables hit the market 'Fırında Tavuk' or village kebab as I've been told it's sometimes referred becomes a popular dish.

We try to eat seasonally as much as possible, firstly because of wonderful taste in-season produce provides is a joy but also because of the cost differences.

Winter means peppers and tomatoes are out but root veggies are at their oh so comforting best.

 

Oven Baked Turkish Chicken Tray Kebab Or Köy Kebabı Using Winter Vegetables

 

Ingredients For Making Turkish Oven Roast Chicken Legs

  • 2 Whole Chicken legs with skin on

For marinade

  • Two garlic cloves
  • One heaped teaspoon tomato salça
  • One heaped teaspoon pepper salça
  • Juice of a half lemon (3-4 Tablespoons)
  • Two tablespoons plain yoghurt
  • One tablespoon olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon cumin powder
  • 1/4 Teaspoon pul biber / Aleppo pepper flakes

 

  • Four medium-sized carrots
  • 250gr new potatoes
  • One large onion cut into thin crescent shapes

 

How To Make Winter Style Fırında Tavuk

Combined the marinade ingredients together and coat the chicken pieces, ensuring all side of the chicken legs are well covered.

Cover and place in the refrigerator for a minimum of three hours but ideally a full day.

When ready to cook remove the chickens and bring to room temperature.

Preheat the oven to 190 degrees.

Turkish Fırın Tavuk or Köy Kebabı Recipe

Peel and cut the carrots and potatoes into 1 cm rounds and place on an oven tray or sheet with the onion slices.

Place the marinated chicken breasts on top of the vegetables and cover the tray with foil and cook in the oven covered for 40 minutes.

Remove the foil from the tray and bake for a further 25-30 minutes, when ready a small cut into the thickest part of the leg should show white meat and clear juices. the Skin will crisp and charred in areas.

Leave the chicken to rest for ten minutes before serving (Vegetables can be kept in the hot but not working oven)
