Now Turks they love their fried food and they love good-tasting, low-cost vegetables, which makes Mücver a popular dish throughout the summer season. Mücver is essentially a savoury fritter and can be made from a number of vegetables.

Kabak Mücver – Courgette / Zucchini fritters for me are one of the best ways to eat this summer squash and ideal for those hot summer days because they need so little work to get them ready, popular with kids up and down Turkey they’re also a great way of sneaking in some veggies into a dish.

The dish is all about that delicate courgette flavour and uses very little other ingredients, seasoned with a little fresh parsley, spring onions with hints of paprika and lemon zest and salt and black pepper.

For this dish little firm courgettes are perfect, the skin doesn’t need peeling just give it a good scrub, which adds little flashes for colour but large works just as well. Avoid soft or bruised courgettes as this ruins the dish.

Traditionally served cold with thick garlic yoghurt but you can, of course, have them warm if you wish.

I searched high and low for meaning or origin of the recipe but to no avail, I guess it’s just one of those classic recipes. If anyone has any insight I’d love to know.
