Wonderful pumpkins are still a feature in the Pazar even though signs of spring are slowly shopping themselves and I have one ready to use, the first stop is Rick Stein's wonderful Sinkonta recipe. Baked pumpkin with sun-dried tomato paste and crispy onions. Just one of many fabulous recipes in his book From Venice to Istanbul.

I'm always on the lookout for interesting books on Turkish cuisine and culture here in Turkey but unfortunately, English language books can be rather hard to come by so I was really excited to come across this book titled ' A Treasury of Turkish Cheeses' by Suzanne Swan.

A classic dish that's been adapted over time but what about the original? Is it possible to recreate the taste the Impreial court may have had then lead to this fantastic dish of meat on a bed of aubergine getting it right to be titled - The Sultans delight? I look at a very old cookbook to go back to the recipes roots.
