A fragrant refreshing drink or light dessert of fresh apricot popular in the summer months.  Perfect on a hot evening after a heavy meal this recipe uses honey and a little cardamom.

Cool off with komposto!

Not quite a compote, for it's more like a drink, not quite a drink because it's got melting fruit pieces in. It's just komposto, and it's utterly refreshing!

 

 

Turkish compote drink comes in various flavours using fresh fruits, sometimes a sole fruit like this apricot version or a concoction of summer fruits. There are the hardly sweetened varieties, and the raise your eyebrows, dance around the room bursting with energy levels.

Sometimes they're served alongside heavy meat dishes but most often following a meal of seasonal delights. Whatever way they came, it's almost a must that you kick back, take your time and savour the taste of cooling sweetness on a hot summers day.

 

 

It's also perfect if you end up with a glut of apricots and need an easy Turkish recipe that'll please all. 

Halved, destoned fresh apricot sit in an orange cast iron saucepan topped with Turkish honey. A jar of cardamoms spills out beside it along with some more fresh apricots.

For me, the best Turkish compotes are made with honey rather than sugar, but You can substitute them very easily should you wish. This recipe simply halves and destones fresh apricots gently cooks them with honey and cardamom and then cools ready for the ultimate refreshing dessert-cum-drink.

 

 

It's super easy, a joy to drink when you're just that little bit too hot and tired and can be doubled up easy enough.

Looking for a refreshing, low sugar dessert out of the Turkish summer produce season - try a hoşaf such as this .... basically the same thing komposto uses fresh fruit whereas hoşaf is with dried.

Ingredients

Apricot Compost

500 Grams Fresh apricots
150 Grams Honey
3 Cardamom seeds, crushed
1 Litre Water

Fresh Apricot Compost Kayısı Kompostosu Directions

  1. Wash, cut in half and remove the stone from the apricots. 
  2. Place into a saucepan with the cloves, honey and water. 
  3. Bring to a slow boil. 
  4. Once the water has come to a boil, turn to a simmer for around ten minutes. 
  5. Remove from the heat and allow to come to room temperature. 
  6. Portion into individual portion sizes or a large serving dish and place into a refrigerator until serving.  
  7. Serve cold.
