 A traditional dish of wheat and meat often served at weddings and circumcision ceremonies. Cooked in meat stock and served with slow cooked lamb dressed with a spicy butter of cumin and pepper flakes this comforting dish of Turkish gruel deserves a place in every winter kitchen. 

Traditional Turkish Wheat Stew With Meat

Ingredients

  • 2 pre-cooked lambs neck cuts or equivalent*
  • 2 cups of Presoaked, Aşurelik buğday (Peeled wheat)
  • 6 cups of hot water
  • 2 cups of bone/meat stock*
  • 1 tablespoon salt

 

  • 100grams butter
  • Pul biber / Aleppo pepper flakes
  • Ground Cumin
  • Lemon juice

 

How To Make Keskek Turkish Wedding Dish

Add the presoaked wheat, hot water and stock to a large non-stick saucepan, cover and bring to the boil before cooking over a low to medium flame for 1.5 to 2 hours (Stirring halfway through).

Salt and over a very gentle heat stir the porridge vigorously until the desired consistency has been reached. For me, that thick, sticky and creamy but with grains remain whole and soft.

Warm the pre-cooked meat (or mix into the porridge if you prefer)

In a small saucepan/frying pan melt the butter and stir in a good pinch of cumin and the pepper flakes.

To assemble place a bed of the wheat stew into each plate/bowl, place the meat, top with the spicy butter and give a generous drizzle of lemon juice before serving.

Notes on how to make keskek 

You can use lamb, beef or chicken to make this traditional Turkish dish, when selecting red meats any cut will but the dish is especially tasty when using the neck cut. Or Gerdan meat. 

Place the meat along with the suggested vegetables n a slow cooker or dutch oven and turn to the lowest temp. Cooking meat on the bone for around 10-12 hours will create soft delicate meat the pulls off the bone and flavoursome stock. 

Suggested for cooking mutton neck;

Celeriac or celery, carrot and onion cut into large chunks, and onion S wedges along with a few cloves of garlic, peppercorns and a bay leaf make the perfect flavourings for the stock
