Refreshingly tangy and sweet. Armenian cucumbers or acur in salad macerated in a sweet and sour dressing to balance the melony cucumber taste. A quick fix salad or side.

Acur salad

1 Onion, cut into thin cresants
3 Medium sized Armenian cucumbers (Acur)
1 Teaspoon Honey
1 Tablespoon Vinegar (Pomegrante, hawthorne or red wine) work well
1 Tablespoon Olive oil
Few leaves of fresh rosemary and thyme (Biberiye / Dağ kekiği)
Salt, black pepper, pul biber to taste

Armenian Cucumber Salad Acur Salatası Directions

  1. Mix up all the ingredients and stir well into the cucumbers & onions. Leave to macerate for at least 15 minutes before serving. The onions will lose their sharpness and the skins of the Acur will soften up.
